Personal watercraft have one counter-intuitive characteristic that causes a large share of serious accidents: releasing the throttle removes steering. Riders instinctively let go and try to turn away from a hazard, and the machine continues straight into it. Name this in the waiver and cover it in your briefing.
The second clause is unpleasant but necessary. Jet drive thrust can cause severe internal orifice injuries to riders who fall off or are seated behind another rider. Manufacturers require protective wetsuit bottoms for this reason, and your waiver should say so plainly.
Beyond those two, the standard rental terms apply: lanyard attached to the rider, minimum ages, boundary limits, and clear damage and salvage charges.
